Roast Fennel with Thyme Vinaigrette

Ingredients

  • 2 Fennel bulbs, wedge cut
  • ½ Garlic bulb, spilt in cloves
  • 6 fresh thyme sprigs
  • Canola oil

Dressing:

  • 2 tbsp. Gingras XO Apple Cider Vinegar
  • 2 tsp. leaves fresh thyme
  • ½ cup olive oil
  • ½ tsp. Dijon mustard
  • Sea salt
  • Pepper

Directions

  1. In a roasting tray place the fennel; season with garlic, thyme, and oil. Roast for 30min at 375F
  2. Whisk together the dressing ingredients in a small bowl
  3. Serve dressing over roasted fennel
