Italian Chicken and Bean Soup

  • 2 tsp. Olive Oil
  • 1 onion, chopped
  • 800ml vegetable stock
  • 400g chopped tomatoes
  • 400g cannellini Beans, drained and rinsed
  • 75g dried orzo pasta
  • 140g roast chicken, shredded
  • 150g extra fine green beans
  • Salt and pepper to taste
  • 50ml Gingras XO Apple Cider Vinegar


  1. Heat the oil in a large pan and gently fry the onion for 3–4 minutes
  2. Add the vegetable stock and vinegar and bring to a boil
  3. Add tomatoes, beans, pasta and chicken.
  4. Bring to a boil, cover, reduce the heat and simmer for 10 minutes, stirring occasionally
