Italian Chicken and Bean Soup

Ingredients
- 2 tsp. Olive Oil
- 1 onion, chopped
- 800ml vegetable stock
- 400g chopped tomatoes
- 400g cannellini Beans, drained and rinsed
- 75g dried orzo pasta
- 140g roast chicken, shredded
- 150g extra fine green beans
- Salt and pepper to taste
- 50ml Gingras XO Apple Cider Vinegar
Directions
- Heat the oil in a large pan and gently fry the onion for 3–4 minutes
- Add the vegetable stock and vinegar and bring to a boil
- Add tomatoes, beans, pasta and chicken.
- Bring to a boil, cover, reduce the heat and simmer for 10 minutes, stirring occasionally
